Lora's chicken rice soup is soooo good. You don't need lots of herbs and spices because the chicken soup base gives it great flavor. Lora made this soup for me when I was sick. It made me feel so much better. I just had to share the recipe with you.
Ingredients:
* 3 skinless chicken breasts
* 2 Tbsp. chicken soup mix base
* 1/2 cup chopped celery
* 1 small onion, minced
* 1 clove garlic, minced
* 1/4 cup chopped carrots
* 1 quart chicken broth
* 1/2 cup rice
* 1/4 tsp. seasoned salt
Directions:
Place everything but the rice in a 3 qt. saucepan. If the broth doesn't completely cover the chicken breasts, add some water so they are covered. Simmer for 20-25 minutes or until chicken is no longer pink inside.
Remove chicken and allow it to cool somewhat. If you used chicken breasts with bone, cut the meat off. Dice the chicken and return it to the broth. You can simmer this a while longer, if you want.
Twenty minutes before you want to serve the soup, bring it to a boil. Add the rice. Reduce heat to medium and cook until the rice is done.
