I like this Quick and Easy Minestrone soup because it doesn't have a lot of vegetables in it. Just tomatoes and zucchini that I always have a lot of in my garden and don't know what else to do with. This is a good way to use them up.
Ingredients:
* 3 garlic cloves, minced
* 1 small onion, chopped
* 1 Tbsp. extra virgin olive oil
* 2 cups vegetable broth or chicken broth
* 1 cup small seashell pasta
* 1 can diced tomatoes
* 2 cups zucchini, diced
* 1 (15 oz) can navy beans
* 1 tsp. Italian seasoning
* 1/2 cup Parmesan cheese, shredded
Directions:
Saute garlic and onion in oil in large saucepan over medium heat until it is just soft. Add broth and bring to a boil. Add pasta, reduce heat to medium, cover, and cook for 5 minutes.
Add remaining ingredients -- except for the Parmesan cheese -- and continue cooking until the pasta is tender.
Top each bowl of Quick and Easy Minestrone Soup with some of the Parmesan cheese before you serve it.
