Winter Veggie and Beef Soup

(A Hearty Ground Beef and Vegetable Soup)

Winter Veggie and Beef Soup tastes good, is healthy, easy, and inexpensive to make. I suggest that you sprinkle grated cheese on the top of each bowl, right at serving time. Add some French bread, and you have a complete meal.

Winter Veggie and Beef Soup Ingredients:

* 2 large potatoes, diced
* 2 carrots, sliced
* 1 parsnip, sliced
* 1 small onion, diced
* 1/2 lb. hamburger, cooked
* 8 cups water
* 1 tomato, chopped
* 1 small can mushrooms
* 1 small can tomato sauce
* 1 beef bouillon cube or 1/2 tsp. powder
* 1 tsp. parsley
* 1/2 tsp. seasoning salt
* 1/2 tsp. pepper

Directions:

In a large soup pot over medium heat, cook the hamburger until it is no longer pink, breaking it up as it cooks. Add the carrots, potatoes, and onion, and saute for about 5 minutes. Add the rest of the ingredients, stir, and bring to a boil. Turn down heat, cover, and simmer for 1 hour or until vegetables are done.
